Super Healthy Breakfast Cookie Recipe

I made these today and they were SO GOOD that I couldn't refrain from posting, even though it's not really crochet-related. :) I've seen a similar recipe floating around various websites, but couldn't find the "source" to cite. In any case, I changed mine up a bit to make it even better. :)

These "cookies" have:

  • no dairy
  • no flour/gluten-free
  • no added fat (except what naturally occurs in the optional nuts)
  • no added sugar (except the natural sugar in the fruit and the small amount of sugar in the dried cranberries)
The result is a cakey, chewy, very moist, lightly sweet treat I feel comfortable giving to my kids (or me!) for breakfast!

Super Healthy Breakfast Cookie

Ingredients:

  • 2 medium-large ripe to overripe bananas *OR* 1.5 cups of mashed pumpkin or squash 
  • 2 cups of oats (use gluten-free, if you like) 
  • 1 cup of unsweetened applesauce 
  • 1/4 cup of dried fruit (I used dried cranberries. If you use dried apples or other larger fruit, you may need to dice it into smaller pieces)
  • 1/4 cup sliced almonds or other nut (optional)
  • Cinnamon to taste
  • Nutmeg to taste (optional)
  • Pinch of salt (optional)

Super Healthy Breakfast Cookie dough

Coarsely mash bananas (or pumpkin or squash) with a fork in a large bowl. Mix in oats, applesauce, dried fruit, nuts, and spices. Drop onto cookie sheet and press them a little (they won't really flatten much while cooking). Makes about 12.

Bake at 325* for 28-30 minutes, or until edges start to brown.

Remove from cookie sheet and cool on wire rack.

Eat!
